These should be everyday go-getters on one's diet menu. Most of our local dishes do not have these components, therefore it is advisable to incorporate them in our meals. You can choose to eat them raw too. vegetables and fruits contain fiber,vitamins and minerals which

2. healing of wounds
3. strong body and bones
4. boost the immune system
5. growth of hair, nails
6. good for the skin

Here are a few recipes i have come up with to make eating these easy and fun

RECIPE 1

                                    MANGO SMOOTHIE
Fruit Smoothies
WHAT YOU NEED: an orange, salon mango, one carrot,one banana

HOW TO MAKE IT:
Squeeze out the juice of an orange into a glass. Chop carrot, mango and banana and blend these till smooth. Then add the orange juice. You have for yourself a healthy and sweet snack.

In case you do not like any of the fruits mentioned above, you can take them out and it will still be tasty but you cannot take out the carrot which gives the smoothies a whole new taste


RECIPE 2
Melon smoothies
                                     Watermelon Strawberry Banana Smoothie - Zesty South Indian Kitchen

WHAT YOU NEED: watermelons, pineapple, coconut juice,lemon and mint(optional)

HOW TO MAKE IT:
Cut a melon open and take out the seeds. You can add a generous amount of melons together with sliced pineapples and blend together. add the coconut juice to the mixture and some tablespoons of lemon and leaves of mint if you like. Refrigerate and drink while chilled.


RECIPE 3
Iced Kenkey

WHAT YOU NEED: Fante kenkey, honey, groundnut paste(optional)

HOW TO MAKE IT
blend one ball or fante kenkey. Add honey to taste and some groundnut paste. healthy meal in one go.


You can also research on any smoothie of your choice and make them. they are a healthy way to start the day and all the ingredients are packed in there



VEGETABLES RECIPES
Rice porridge with carrot

WHAT YOU NEED: rice, carrot, honey, cinnamon(optional) or any toppings like sesame seeds, hazel nuts or any nuts

HOW TO MAKE IT:
This recipe can be done in two ways.
1. Soak the rice over night. Pour the water out the next day and blend it to smoothen. then cook it. When rice is almost done, blend carrots into rice and take off the fire after two minutes. Add honey and cinammon to taste.

                                                                  OR
2. Cook the rice as you would cook rice porridge. When its almost done, shred carrots into it and take off the fire after two minutes. Add honey and cinnamon to taste




RECIPE 2
Tuna Salad

WHAT YOU NEED: lettuce, carrots, green pepper, onion(optional), cucumber, spinach,tuna, spring onion, sweet corn(optional but tasty)

HOW TO MAKE IT:
Slice, dice, chop all vegetables. mix them up in a bowl. pour tuna into the mixture and add the sweet corn. as easy as it can get.

TIP: You can add freshly diced tomatoes if you like. it gives it colour and taste. im not a fun of  fresh tomatoes so i do not add them to my salad though.


RECIPE 3
Chicken salad- MY VERSION OF CHICKEN SALAD

                                            Vietnamese Shredded Chicken Salad - Once Upon a Chef

WHAT YOU NEED: cabbage, green pepper, carrot, onion, spring onion, chicken breast, unsalted butter and some salt, garlic powder and or ginger,slice of lemon

HOW TO MAKE IT:

Cut cabbage and all other vegetables. mix them into a bowl.
Cut the chicken breast into cubes and steam it with some salt and garlic. take off the fire after ten minutes.
Take a frying pan and into it add a tablespoon of unsalted butter and one glove of garlic(chopped). then add the vegetables and chicken in there. Stir fry for a minute or two till vegetables are tender yet crunchy and chewy. take off the fire and squeeze a slice of lemon into it for taste.

TIP: You can enjoy it with rice or eat it just the way it is. Do not worry about the garlic. it adds flavor to the food. I tried it. But you can take it out if you do not like Garlic in your food.



SNACK SUGGESTIONS
1. Roasted plantain and groundnuts. What people usually call Kofi Brokeman

2. Corn and groundnut(Aburo ne nkatie)

3. Assorted nuts. These are snacks found in supermarkets and shops


BREAKFAST OPTIONS

OAT MEAL
WHAT YOU NEED: oats, slices of wheat bread/sour bread/oat bread/brown bread, pear, egg, lettuce

HOW TO MAKE IT:
Prepare the oat and put in a bowl to cool. While its cooling, slice the wheat bread. Place lettuce on top, cut slices of avocado on top of it. Boil an egg and add to the bread toppings. there you have it. Easy and simple., you can take out the pear if its out of season.


BREAD TOPPINGS OPTIONS
What if pears are out of season? no worries here are other options to try

1. Wheat bread, peanut butter and banana. Spread peanut unto bread.Slice the banana unto the bread. its easy and delicious

2. Scramble eggs using unsalted butter and slice some carrots unto it.

3. Tuna, onions and spring onions and olives(optional)

4. Brown bread and jam/honey and some nuts



MAIN MEALS
LOCAL DISHES
Usually its advisable to go in for soupy foods as they are made with no oil. For example, light soup, groundnut soup, palm nut soup and many others coupled with boiled yam or fufu.  However if you are checking your weight, you might want to take out fufu and replace it with rice.

OPTIONS TO CHOOSE FROM

1. BANKU AND TILAPIA WITH PEPPER.
this option is not only healthy but also very tasty and makes one full. Banku is made of maize and cassava so they have no oil or fats in there. Pepper has onions, tomatoes, kpakpo shito in there. And the tilapia is fish and has no fat.

2. YAM AND KONTOMIRE STEW

Plantain is very good for one's health as it contains iron which is good for body building. Preferably its best to go for the kontomire stew done in the earthenware pot. i guess this is a meal most of us know how to prepare. if it is the one in the pot, you can add groundnut paste to taste and some smoked fish

TIP: When it comes to oily food, you can choose olive oil, canola oil, sunflower oil, avocado oil, palm oil. these oils are very healthy and good too. a little goes a long way.
